We know, we know it’s been a while since we’ve done an Eating Healthy On A Budget post. Maybe that’s because lately we’ve been indulging in cookiespizza, & donuts. Oops! Here to make it up to you is our incredible Zucchini Noodle recipe with Avocado Pesto. Made with just 7 ingredients this recipe is the perfect summertime meal that is both healthy & affordable. Not to mention it’s incredibly delicious!

Eating healthy on a budget is a task that can often times seem nearly impossible. One trip to the grocery store to purchase all organic items can often leave our bank accounts looking pretty sad but with this recipe that is not the case. Since it only involves a few ingredients this recipe won't break the bank. Plus it's a super fun dish to make. The spiralizer used to make the noodles is also very cost effective at only $12! Feel free to use another type of vegetable noodle if you'd like. Anything from sweet potato to carrots to squash can work. As for the pesto, the great part about it is that most of the ingredients are ones you can use again after the recipe. For instance the olive oil is a perfect household staple that you can use for numerous other recipes such as our turkey lettuce wraps. Another item you can use again is the arugula. Typically sold in a bunch larger than one cup, we used the left over the following day for a delicious salad! These factors along with the incredible taste of this recipe makes eating healthy extremely tasty & very wallet friendly. 


  • 1 cup basil
  • 1 cup baby arugula
  • 1 avocado
  • ½ cup pinenuts
  • 1 tsp garlic powder
  • 3 tbsp olive oil
  • 4 oz zucchini noodles


  1. In food processor, blend basil, arugula, & avocado until smooth. Add in pinenuts & pulse 5 times.
  2. In large skillet, heat olive oil with garlic powder over medium heat. Add in zucchini noodles & pesto sauce. Let sit for 4 minutes, stir, & let sit another 4 minutes. Serve & enjoy!
