Many of us know that avocado toast is the best thing since, well, sliced bread. But why stop there? Can a great thing become better? Indeed it can, and it has. Have you ever been a bit bummed that your avocado toast wasn't more low carb? Have you felt like bread was your only option? Prepare for what's next: sweet potato toast.

You start with the basics: a slice of sweet potato, or several, since chances are you have an entire sweet potato to work with. 

Next step: Plop your piece of sweet potato in the toaster, and get some potential toppers ready. You have an array of options, and your creativity is the limit.

1. Your Classic Avocado "Toast"

Bust into your avocado and get to slicing! Place the green slices atop your sweet potato and drizzle with olive oil, and sprinkle with salt and cracked pepper. You can enjoy this with a side of lemon tea.

2. Blueberry Cheesecake "Toast"

Get some reduced-fat cream-cheese and begin to spread on your sweet potato slice. Once that's complete, sprinkle some chia seeds on top, and finish with ripe blueberries for a piece of dessert toast that is perfect for a Sunday morning brunch. You can enjoy this with a side soy latte.

3. Coconut Tangerine Pomegranate "Toast"

The title may speak for itself, but in case you'd like specifics, let's go into the details. Grab a Cutie, tangerine, or any other orange, and slice finely. Place the slices on top of your sweet potato slice and garnish with a sprinkling of pomegranate seeds and coconut flakes (unsweetened). You can finish with a drizzle of honey or agave nectar. You can enjoy with hibiscus tea on the side.

4. PB Pecan "Toast"

If you're a peanut butter lover, this one's for you! Whatever you nut-butter, bust it out, and drizzle (this works especially well for the all-natural, stir, drippy kind) and add a sprinkling of ground but not powdery nuts (we like pecans). Garnish with ground flax seeds. you can enjoy with a black coffee on the side.
