Thank Us Later For This Vegan Sweet Potato Taco Recipe
When choosing the title for a blog post we try & think of what would appeal to most people on top of perfectly describing what the post is about. For instance if a recipe contains no meat we’d classify it as a vegan or vegetarian recipe while also naming the specific recipe itself. However every once in a while we get a recipe where we have trouble naming it. Not necessarily because we don’t know exactly what we made (that would be concerning..) but because it falls into SO. MANY. CATEGORIES.

This recipe is totally one of those. It’s vegan, takes 5 minutes to make, is delicious & healthy, costs less than $15 to make, is beyond simple to create (seriously it only takes 3 quick steps to create!), & oh so much more. So what do we do? Title it, “Easy, Delicious, Healthy, & Vegan 5 Minute Sweet Potato Taco Recipe”. Seems a bit complex doesn’t it? So naturally we chose the simpler version BUT do note that you are getting every single one of those things from the elongated title in this one recipe. Meatless Monday? Check. Taco Tuesday? Check. We could go on & on but we’re guessing by now you’ve moved to your kitchen in attempt to make this recipe…
Ingredients:
- 1 sweet potato
- 2 tbsp pre-cooked brown rice
- 2 tbsp beans
- 2 tbsp pre-cooked corn
- ¼ avocado, mashed
- shredded cabbage
- optional:
- lime, for garnish
Instructions:
- Place your sweet potato on microwavable safe plate. Poke holes all over the sweet potato with a fork & then microwave it on high for 4-5 minutes or until it is soft.
- While the sweet potato is cooking, mash your avocado with the back of a fork in a small bowl. Strain your beans, rinse, & drain.
- Carefully (it will be hot!) slice the sweet potato in half but only go halfway down the center as to keep the bottom together (think tortilla shell). Toss all your ingredients into the sweet potato center, serve, & enjoy!
