Believe it or not, many cooking oils on the grocery store shelf labelled "healthy", really aren't. This is particularly true when it comes to vegetable oils. It has even been shown that vegetable oils are high in Omega-6 fatty acids which cause inflammation in the body. Excessive consumption of Omega-6 has been linked to cardiovascular disease, arthritis, depression, and certain types of cancer. 

Because vegetable oils are overwhelmingly genetically modified organisms (GMOs), a myriad of other health problems have resulted from cooking with vegetable oils.
