Fall is the best time to snuggle up to a good book and eat your favorite soup as the leaves fall. This comfort veggie soup by Adriene will not only get you in the fall season, but it will warm your heart and belly!
ADRIENE’S VEGGIE SOUP RECIPE
1 chopped yellow onion
2-3 garlic cloves, finely minced
2-3 medium carrots, peeled and chopped into rounds
2 potatoes, peeled and diced
2 cups chopped fresh green beans
2 stalks of celery, diced
2 ears of corn, kernels removed
1 cup chopped kale
1 can diced tomatoes
2 quarts vegetable broth
Salt and pepper
Herbes de provence
Finely chop onion and garlic. Heat olive oil in a large pot over medium-low heat. Once hot, add the onion and garlic. Season with salt, pepper, thyme, and herbes de provence, about a pinch each. Peel carrots and chop into rounds and add to pot.
Add diced tomatoes, corn, green beans, celery, potatoes, and vegetable broth and continue to cook, stirring occasionally. Finally, chop kale and stir into soup.
Bring to a simmer, and cook until vegetables are tender. Enjoy!
