How to Make Jack-O-Lantern Stuffed Peppers || KIN PARENTS
Surprise your family with this delicious main dish for a healthier Halloween feast! Orange bell peppers are easily carved to resemble jack-o-lanterns that pairs perfectly with mashed potatoes and steamed spinach.
Ingredients:
4-6 orange bell peppers
1 lb. browned lean ground beef
1 small diced onion
2 cups seasoned croutons
1 can diced, seasoned tomatoes
2 diced garlic cloves
¼ cup mustard
1 egg
¼ teaspoon salt
¼ teaspoon pepper
shredded cheese
Instructions:
1. Using a paring knife, slice an opening into the top of an orange bell pepper -- cutting a circle around the stem. Remove lid and slice off seeds. Remove seeds from inside of pepper. Cut a jack-o-lantern face in the side of the pepper. Set aside.
2. Combine ingredients in a single large bowl.
3. Place peppers in a baking dish. Spoon mixture into peppers. Top with shredded cheese. Reposition pepper tops.
4. Bake 45 minutes to 1 hour at 350 degrees F.
